This is an easy melt and mix type of Christmas Cake which makes it quick and easy to make because it requires no overnight soaking of the fruit.

Ingredients

  • 1 kilogram Mixed Dried Fruit
  • 2 tablespoons Sweet Sherry
  • 250 grams Brown Sugar firmly packed
  • 250 grams Butter
  • 125 ml Milk
  • 3 Eggs
  • 450 grams Plain Flour
  • ½ teaspoon Bi Carb Soda
  • 3 teaspoons Steve's Christmas Cake & Pudding Spice

Instructions

  • Grease a cake tin, covering the base and sides with baking paper.
  • Pre-heat the oven to 120 celcius.
  • Combine in a bowl the fruit, sherry, eggs, flour, bicarb and Christmas Cake Spice.
  • In a separate bowl (preferably a microwave bowl) add the butter and milk and heat up 1 minute at a time until the butter has just melted. (don't let it boil)
  • Add the butter mix to the fruit mix and with a beater beat until combined well.
  • Pour cake into the prepared cake tin and bake in the oven for approx 5 hours.
  • Allow to cool.

Notes

Cake can be stored in the fridge for 2 months or frozen in the freezer.

Instructions

  • Preheat oven to 180°C.
  • Place the apple, sugar and Apple Pie Spice in a large bowl and mix to combine. Transfer to a 1.5-litre-capacity ovenproof dish.
  • To make the crumble topping, place the flour, sugar, Apple Pie Spice, oats and butter in a large bowl and mix until just combined.
  • Spoon the crumble mixture over the apple and place the dish on a large baking tray. Bake for 40–45 minutes, or until the crumble is golden and the apples are soft.
  • Serve with vanilla ice-cream.

Ingredients

  • 680 grams Fruit Bread (24 oz)
  • 8 Eggs
  • 2 cups Milk (473 grams)
  • 2 cups Cream
  • ½ cup Brown Sugar (90.5 grams)
  • 2 ¼ teaspoon Apple Pie Spice
  • 2 teaspoons Vanilla Essence
  • 6 tablespoons Butter melted
  • 1 tin Cooked Apple Pieces

Toppings for serving:

  • Ice Cream
  • Cream
  • Caramel Topping

Instructions

  • Preheat oven to 180 celcius.
  • Cut bread into 5 cm cubes and put into a baking dish - set aside.
  • In another bowl whisk together the eggs, sugars, cream, Apple Pie Spice and vanill until well combined.
  • Evenly drop the apple chunks over the cubed bread in the baking dish and give a light toss around.
  • Pour both the melted butter and cream mixture over the bread and apples in the baking dish and give a little toss around so that all the ingredients is evenly combined.
  • Cover either with a lid or foil.
  • Cook in the oven for approx 35 minutes.
  • Remove the foil and bake for another 35 minutes or until a cake skewer comes out clean.
  • Allow to cool.
  • Serve with ice-cream, cream and caramel topping.

Ingredients

Cake Batter

  • 3 cups Plain Flour (434 grams / 15.3oz)
  • ¼ teaspoon Salt (1.3 grams / 0.4 oz)
  • 1 cup Sugar (220 grams / 7.7 oz)
  • 1 tablespoon Baking Powder (20.3 grams / 0.71 oz)
  • 1 ½ cups Milk (355 grams / 12.5 oz)
  • 2 Eggs
  • 2 teaspoons Vanilla Essence (9.6 grams / 0.33 oz)
  • ½ cup Butter, melted (114 grams / 4.02 oz)

Cinnamon Mixture

  • 1 cup Butter, room temperature. (228 grams / 8.04 oz)
  • 1 cup Brown Sugar (181 grams / 6.3 oz)
  • 2 tablespoons Plain Flour (32.8 grams / 1.15 oz)
  • 1 tablespoon Steve's Apple Pie Spice (0.7 grams / 0.02 oz)

Icing

  • 1 cup Pure Icing Sugar (152 grams / 5.3 oz)
  • 2 tablespoons Milk (40 grams / 1.4 oz)
  • 1/2 teaspoon Vanilla Essence (2.8 grams / 0.9 oz)

Instructions

  • Preheat oven to 175 celcius.
  • Spray or butter a baking dish (approx size 22cm x 33cm)
  • In a bowl mix all of the cake batter ingredients together then scrape into the greased baking dish.
  • In another bowl combine all the Cinnamon Mixture ingredients together.
  • Drop evenly all over the cake small spoonfuls of the cinnamon mix.
  • With a knife swirl the cinnamon into the cake batter.
  • Once done put it into the oven for approx 25 minutes.
  • Mix together in another bowl all of the Icing ingredients.
  • Once the cake is cooked and cooled down ice the cake.
  • Let it set and then enjoy

Ingredients

DOUGH

  • 4 tablespoons Water at room temperature
  • 4 tablespoons Butter melted
  • 100 grams Cottees Instant Vanilla Pudding Mix (3.5 oz)
  • 1 cup Milk 250 ml (8.8 fl oz)
  • 1 Egg room temperature
  • 1 tablespoon White Sugar
  • ½ teaspoon Salt
  • 4 cups Plain Flour 480 grams (16.9 oz)
  • 7 grams Active Dry Yeast (0.2 oz)

FILLING

Instructions

  • Place in this order into the pan of your bread machine - water, 1/4 cup melted butter, vanilla pudding, 1 cup warm milk, egg, 1 tablespoon sugar, salt, bread flour, and yeast.
  • Set machine to Dough cycle; press Start.
  • When the dough cycle has finished, turn the dough out onto a lightly floured surface and roll into a 17x10 inch rectangle.

TO MAKE THE FILLING:

  • In a small bowl, stir together brown sugar and, Apple Spice.
  • Spread the softened butter over the dough evenly
  • Sprinkle brown sugar mixture over dough.
  • Butter a baking pan.
  • Roll up dough, beginning with long side. Slice into 16 x three centimetre (1.1 in) slices. Place in prepared pan.
  • Let rolls rise in a warm place until doubled, approx 45 minutes.
  • Preheat oven to 175 Celcius (347 f) Bake rolls in oven until browned approx 15 - 20 mins.

FOR THE GLAZE:

  • Mix together the icing sugar, butter, milk, vanilla in a bowl until smooth.
  • Drizzle over the buns and serve.

  • 250 grams Self-Raising Flour (8.8 oz)
  • 7 grams Baking Powder (0.16 oz)
  • 2 teaspoons Apple Pie Spice
  • Pinch of Salt
  • 150 grams Sugar (5.2 oz)
  • 1 Egg
  • 150 mls Milk (5.2 fl oz)
  • 6 tablespoons Sunflower Oil

Instructions

  • Preheat oven to 190 celcius (375 f)
  • Either grease a muffin tray or put the muffin cases into the holes.
  • Mix together until all ingredients are just combined. Don't overbeat it.
  • Using an ice cream scoop, spoon the batter into the pan or cases.
  • Bake for approx 20 minutes or until a cake skewer comes out clean.

Ingredients

Cake Batter

  • 1 cup Unsalted Butter softened
  • 2 cups White Sugar
  • 4 Eggs
  • 1 tablespoon Vanilla Extract
  • 3 cups Plain Flour
  • 1 teaspoon Bi-Carb Baking Soda
  • ½ teaspoon Salt
  • 2 cups Sour Cream (or I used 1 cup Sour Cream & 1 Cup Cream)

Filling

Instructions

  • Preheat oven to approx 170 celcius.
  • Grease a baking dish (22cm x 33cm)with butter (or use some spray)and set aside.
  • You need 3 bowls to make this cake.

Bowl 1

  • In this bowl add the Filling ingredients - Steve's Apple Pie Spice, Cocoa and Brown Sugar and stir until all combined.

Bowl 2

  • To make the Streusel Topping add to this bowl - the White Sugar, Steve's Apple Pie Spice, Plain Flour, and melted butter.
  • Mix well until all combined.

Bowl 3

  • To make the cake batter, cream together the butter and sugar until fluffy.
  • Then add the eggs and vanilla essence.
  • Add the remainder of the ingredients - plain flour, bi-carb and sour cream and beat until the batter is nice and smooth

To make up

  • Pour half the batter into the baking dish and spread it out so that it's even.
  • Then sprinkle thick the 'Filling' mixture. Pour the remainder of the batter over the top and spread out once again.
  • On the top sprinkle the Streusel Topping over the whole batter mixture.
  • Bake in the oven for approx 45 mins to 1 hour. (I actually forgot to time how long it took the cake to cook) Just keep checking it from this time with a cake skewer in the centre.
  • When the skewer comes out clean allow to cool on the bench before eating.
